Silver, light or white rums are continuously distilled and are mostly filtered through very hot charcoal to get rid of any impurities. They have a very mild flavour except a general sweet taste which means they are mostly used in cocktails. Gold rums are aged in casks for a longer time than white rum and, as a result, are darker in colour and stronger in taste. Dark rums are aged and fermented for a lot longer (usually 3-20 years) which gives them a much darker colour. Dark rum usually has a much deeper flavour from strong types of cask and from the strong types of casks used to age them have hints of a barrel’s spice or caramel.

Spiced rum is light or gold rum infused with spices such as star anise, cinnamon, rosemary or pepper, and sometimes with caramel to add colour to white rum. A very common brand of spiced rum is Captain Morgan
